Simple corn fritters with a rocket salad. Easy to make but delicious in taste.

Ingredients

  • 1 420g Corn kernels

  • 2 Small eggs

  • 1 Cup self raising flour

  • 1 Tbsp baking powder

  • 1 Tbsp salt

  • 1 Tsp black pepper

  • 1 Tbsp chopped parsley

  • 1 Tbsp chopped spring onion

  • 1/2 cup milk

  • 3 Tbsp vegetable oil

  • Rocket salad
  • 60g Bag of rocket

  • 1/2 Small lemon

  • 2 Tbsp olive oil

  • Pinch of salt

  • 1 Pack of cherry tomatoes

Directions

  • Chop the parsley and spring onion
  • Whisk the eggs and milk in a medium sized bowl
  • Add all the dry ingredients through a sifter to the eggs and milk
  • Add the herbs and mix it all gently until combined
  • Keep the heat on low to medium and place the oil in a fry pan
  • Cook the fritters to your preferred size until golden on both sides
  • Place the fritters on a paper towel to absorb the extra oil
  • Mix the rocket with oil, salt, lemon and tomatoes in a small bowl
  • Serve the corn fritters with or without sauce and enjoy

Notes

  • Sauce options: Sweet chilli or Greek yoghurt
