Grilled Chicken with Couscous and Tzatziki

Grilled chicken with couscous and tzatziki is an amazing meal full of flavour and different textures. Easy to make and I promise everyone will love it.

Ingredients

  • Chicken
  • 400g of Supermarket Marinated Chicken strips

  • Couscous
  • 300g Couscous

  • 1 Red capsicum

  • 1 Mild red chilli

  • 4 Spring onion leaves

  • 2 Tablespoons of Olive oil

  • Tzatziki
  • 250g of Natural Yoghurt

  • 1/2 Cucumber

  • 1/2 Lemon juice

  • 1/2 Bunch of Mint

Directions

  • Put 300g of couscous in a large bowl with 2 300g cup of Boiling water. Cover the bowl and add a pinch of salt.
  • Finely cut the chilli, capsicum , mint and spring onions and place aside.
  • Use a box grater and grate the cucumber, add a pinch of salt on top. After 1 minute, squeeze out the grated cucumber to get rid of the excess water.
  • In a small bowl, add the cucumber, yoghurt, lemon juice and mix all together. Place in the fridge.
  • Cook the marinated chicken in a griddle pan until golden on both sides.
  • With a fork, fluff up the couscous and add the chilli, capsicum, spring onions and olive oil.
  • Serve the couscous with the grilled chicken and tzatziki on the side and enjoy.
