When you are feeling tired and do not have much time to make lunch this dish is fast and full of flavour. Try this grilled eggplant with feta cheese on Turkish bread and you will continue to use this recipe for years to come.

Ingredients

  • 1 piece of Turkish bread

  • 1 medium Eggplant

  • 200g Feta Cheese

  • 6 large cloves of Garlic

  • 2 tablespoon of Olive oil

  • 2 teaspoon of Salt

Directions

  • Cut the Turkish bread in half and cut the eggplant lengthwise
  • Place the garlic cloves and Turkish bread in the oven for 15 minutes on 160 degrees celsius
  • Salt the eggplant and add the olive oil to a griddle pan. Grill them on medium heat until brown on each sides.
  • Take out the bread and garlic from the oven and crush the cloves. Spread them evenly on the bread.
  • Add the feta cheese, eggplant and serve alone or with sides.
