Rice noodles with peanut sauce and chicken is a delicious option for lunch when you are feeling creative and experimental. It is easy and super yummy.

Ingredients

  • 100g Rice noodles

  • 180g of Chicken

  • 1/2 Brown onion

  • 1/2 Carrot

  • 3 Florets of Broccoli

  • 2 Tablespoons of Vegetable oil

  • Pinch of Dried chilli

  • 1 Teaspoon of Salt

  • Peanut Sauce
  • 1/4 Cup of Peanut butter Crunchy Spread

  • 1 1/2 Tablespoons of Soy sauce

  • 1/4 Cup of Water

  • 2 Teaspoons of Sugar

Directions

  • Cut chicken into 3cm cubes and place onto skewers and add the salt evenly amongst the chicken
  • Chop onion, carrots and broccoli to your preferred style
  • Place the peanut butter, sugar and soy sauce in a small bowl and whisk all together. Then add the water and fold through. At first the sauce will look separated but continue to mix until it comes together.
  • Cook the noodles in boiling water according to the instructions on the packet
  • Boil the broccoli until they turn bright green and cook the chicken skewers until golden and set aside
  • Place vegetable oil in a wok and add the onion. After 30 seconds add the carrots and broccoli
  • Add the drained noodles and sauce and mix all together for 1 minute
  • Serve with coriander or peanuts
