minutesShakshouka is a great dish when you don’t know what to cook and need to use the extra vegetables laying around in the fridge.
Ingredients
2x400g Tinned whole peeled tomatoes
1/2 Red capsicum
1/2 Brown onion
4 Eggs
50g Goat or Feta Cheese
1 Teaspoon Cumin
1/2 Teaspoon of ground Coriander
2 Tablespoons of Olive oil
A pinch of Chilli flakes
Small bunch of Fresh Parsley
Salt to taste
Pepper to taste
Bread for Grilling or Toasting
Directions
- Chop the onion and capsicum
- Add the Olive oil in a large fry pan and cook onion and capsicum on low to medium heat for 3 minutes
- Add the cumin, coriander and chilli flakes
- After 2 minutes add the tinned tomatoes and let it simmer for 20 minutes
- Add salt and pepper to taste
- After 20 minutes, make 4 separate placements in the sauce and crack the eggs in place
- Cover the fry pan with the lid and let it cook for another 3 minutes
- In the meantime grill or toast bread for serving
- Take the Shakshouka of the heat and let it cool down before adding the cheese and parsley

- You can use Feta or Goats cheese
