These muffins can be eaten for brunch or as a snack after lunch. They involve healthy ingredients and are super easy to make.

Ingredients

  • 1 Cup of Carrot ( 1 large carrot or 2 small carrots )

  • 1/4 Cup oats

  • 3/4 Cup Self raising flour

  • 1/4 Cup Walnuts

  • 1 Teaspoon of Chia seeds

  • Pinch of Salt

  • 1 Tablespoon of Honey

  • 1/4 Cup of Vegetable oil

  • 1/4 Cup of Greek Yoghurt

  • 1/4 Teaspoon of Nutmeg

  • 1/4 Teaspoon of Cinnamon

Directions

  • Peel the Carrot and shred
  • In a medium bowl, sift the Flour, Salt, Nutmeg and Cinnamon
  • Place Walnuts, Oats and Chia seeds in the dry ingredients bowl
  • In a separate medium bowl, place the Carrots, Honey, Yoghurt and Oil
  • Slowly add the dry ingredients to the wet ingredients and fold through
  • Spray the muffin tin with cooking spray
  • Place the mixture in the tin
  • Cook for 25 mins at 190 degrees celsius or until golden brown.

Notes

  • Alternate the dry ingredients if you have allergens
