minutesThese muffins can be eaten for brunch or as a snack after lunch. They involve healthy ingredients and are super easy to make.
Ingredients
1 Cup of Carrot ( 1 large carrot or 2 small carrots )
1/4 Cup oats
3/4 Cup Self raising flour
1/4 Cup Walnuts
1 Teaspoon of Chia seeds
Pinch of Salt
1 Tablespoon of Honey
1/4 Cup of Vegetable oil
1/4 Cup of Greek Yoghurt
1/4 Teaspoon of Nutmeg
1/4 Teaspoon of Cinnamon
Directions
- Peel the Carrot and shred
- In a medium bowl, sift the Flour, Salt, Nutmeg and Cinnamon
- Place Walnuts, Oats and Chia seeds in the dry ingredients bowl
- In a separate medium bowl, place the Carrots, Honey, Yoghurt and Oil
- Slowly add the dry ingredients to the wet ingredients and fold through
- Spray the muffin tin with cooking spray
- Place the mixture in the tin
- Cook for 25 mins at 190 degrees celsius or until golden brown.

- Alternate the dry ingredients if you have allergens
