Try this delicious and flavourful oregano and lemon grilled chicken for lunch. It is amazing for a quick meal at home or take it to work. You can eat this dish in a wrap, on its own or with sides such as fries.

Ingredients

  • 2x 200g Skinless Chicken Breast

  • 1 Teaspoon of dried Oregano

  • 1/2 Lemon zest

  • 1/2 Lemon juiced

  • 2 Teaspoons of Olive oil for Chicken

  • 1 Tablespoon of Olive oil for the pan

  • Salt to taste

  • Black Pepper to taste

Directions

  • Lay the chicken breasts on baking paper and using a rolling pin lightly beat the chicken until they are both the same thickness.
  • Add the oregano, oil, lemon zest, salt and pepper and massage the mixture onto the breasts until they are covered.
  • In a medium griddle pan on low to medium heat, add the tablespoon of oil and place the breasts in.
  • Cook for roughly 5 to 8 minutes or until chicken turns white on the inside. Once cooked, let the chicken rest and squeeze the lemon juice over the breasts.
  • Serve the chicken alone or with sides such as a salad, fries or cut the breasts and place them in a wrap.
