Mushroom wrap with Cottage cheese

minutesTry this mushroom wrap when you are not feeling like meat but still want something filling.
Ingredients
4 Portobello Mushrooms
Wraps 4 Pack
200g Cottage cheese
1/2 Red onion
1/2 Red capsicum
1 Large tomato
Pinch of salt
Pinch of black pepper
1/4 Lemon
1 Teaspoon of Olive oil
Directions
- Chop onion, capsicum and tomato
- With a teaspoon remove the gills from the mushroom
- Grill capsicum for 5 minutes and place on plate
- Grill mushrooms for total of 10 minutes, 5minutes on each side.
- Grill or toast wraps till warm
- Add the salt, pepper, lemon and olive oil to the cottage cheese
- Cut mushrooms into thirds
- Assemble wraps and serve
