Mushroom wrap with Cottage cheese

Try this mushroom wrap when you are not feeling like meat but still want something filling.

Ingredients

  • 4 Portobello Mushrooms

  • Wraps 4 Pack

  • 200g Cottage cheese

  • 1/2 Red onion

  • 1/2 Red capsicum

  • 1 Large tomato

  • Pinch of salt

  • Pinch of black pepper

  • 1/4 Lemon

  • 1 Teaspoon of Olive oil

Directions

  • Chop onion, capsicum and tomato
  • With a teaspoon remove the gills from the mushroom
  • Grill capsicum for 5 minutes and place on plate
  • Grill mushrooms for total of 10 minutes, 5minutes on each side.
  • Grill or toast wraps till warm
  • Add the salt, pepper, lemon and olive oil to the cottage cheese
  • Cut mushrooms into thirds
  • Assemble wraps and serve
