Pesto Pasta with Sundried Tomatoes and Gouda Cheese

This Pesto Pasta recipe is so flavourful and delicious that you will want to share it with everyone. This pasta is great for lunch at home or you can take it to work.

Ingredients

  • 400g of Penne pasta

  • 60g of Sundried tomatoes

  • 50g of Pine nuts

  • 60g of Gouda cheese

  • 190g of Pesto sauce

  • 3/4 cup of Pasta cooking water

  • 1 Tablespoon of salt

  • 1 Teaspoon of black pepper

  • 1 Teaspoon of olive oil

Directions

  • Bring a large pot of water to the boil with the salt and cook the pasta for the length of time on the packet
  • In a medium sauce pan, add the olive oil and toast the pine nuts on low heat until lightly brown. Be careful not to burn them.
  • Chop the sundried tomatoes and grate the gouda cheese
  • Remove 3/4 cup of pasta cooking water and place aside. Drain the pasta and put it back in the pot.
  • Add the pesto sauce to the pasta with the cooking water. Mix all together and add the sundried tomatoes and pie nuts.
  • Add the black pepper, gouda cheese and serve
