Ricotta with cherry tomatoes on sourdough is a quick and delicious lunch when you are short on time. The crunchy slice of bread with the tangy tomatoes is a combination you will come back to again and again.

Ingredients

  • 200g Cherry tomatoes

  • 8 Sourdough slices

  • 8 Tablespoons of smooth ricotta

  • 1 Tablespoon of olive oil

Directions

  • Toast the sourdough slices and cut the cherry tomatoes in half
  • Spread the ricotta on the slices and top with the tomatoes and olive oil
