Tabouli is a Middle Eastern dish that mainly consists of parsley. It is easy to make and does not require any cooking. I love scooping up the salad with lettuce. The lettuce adds an extra freshness and crunch to this dish.

Tabouli is a easy dish that goes amazingly as a side or on its own. This salad is fresh and adds an element of crunch to any main meal.

Ingredients

  • 6 Cups of chopped parsley

  • 2 Medium tomatoes

  • 1 Small brown onion

  • 1/4 Cup of bulgur

  • 1/4 Cup of lemon juice

  • 1/2 Cup of olive oil

  • 1 Teaspoon of salt

Directions

  • Add the dried bulgur to a small bowl and cover with water for 10 minutes until softened
  • In the meantime chop the parsley, onion and tomatoes and place in a medium bowl
  • Add the oil, salt and lemon to the bowl
  • Add the bulgur once softened and mix the salad together and enjoy

Notes

  • Use lettuce to scoop up the tabouli for a fresh crunch.
