Enjoy this brown rice and tuna salad for a fresh lunch that will fill you up. This dish contains many textures that will please your palate.

Ingredients

  • 200g Brown rice

  • 200g Canned tuna

  • 1 Medium cucumber

  • 1 Carrot

  • 1 Avocado

  • 250g Corn kernels

  • 2 Tablespoons of mayonnaise

  • 1 Tablespoon of seeded mustard

Directions

  • In a medium saucepan, boil the rice on medium heat for 20 minutes,
  • In the meantime cut the cucumber, carrot and avocado and set aside,
  • Mix the mayonnaise and mustard together and place in the fridge.
  • Drain the rice and serve with the vegetables, sauce and top with tuna.
