Ingredients
2 Barramundi fillets
2 Burger buns
20g Rocket
2 Teaspoons of whole grain mustard
2 Tablespoons of olive oil
Squeeze of lemon
- Coating
1 Egg
1/3 Plain flour
2/3 Breadcrumbs
- Coleslaw
40g Red cabbage
30g Carrot
3 Tablespoon of Mayo
Directions
- Whisk the egg in a medium bowl and place the plain flour and breadcrumbs on separate plates.
- Coat each fillet in plain flour , dip them in the egg then in the breadcrumbs, Place them in the fridge while you do the coleslaw.
- Grate the red cabbage and carrot then mix together with the mayonnaise. Place in the fridge.
- In a medium fry pan add the olive oil on low to medium heat. Cook the fillets for 3 to 4 minutes or until golden brown.
- To assemble the burgers. Add 1 teaspoon of mustard to each bun. Place the rocket leaves on with a squeeze of lemon. Then add the fillets topped with coleslaw.
