Try these tasty barramundi burgers topped with crunchy coleslaw for lunch. Everyone will love them from kids to adults.

Ingredients

  • 2 Barramundi fillets

  • 2 Burger buns

  • 20g Rocket

  • 2 Teaspoons of whole grain mustard

  • 2 Tablespoons of olive oil

  • Squeeze of lemon

  • Coating
  • 1 Egg

  • 1/3 Plain flour

  • 2/3 Breadcrumbs

  • Coleslaw
  • 40g Red cabbage

  • 30g Carrot

  • 3 Tablespoon of Mayo

Directions

  • Whisk the egg in a medium bowl and place the plain flour and breadcrumbs on separate plates.
  • Coat each fillet in plain flour , dip them in the egg then in the breadcrumbs, Place them in the fridge while you do the coleslaw.
  • Grate the red cabbage and carrot then mix together with the mayonnaise. Place in the fridge.
  • In a medium fry pan add the olive oil on low to medium heat. Cook the fillets for 3 to 4 minutes or until golden brown.
  • To assemble the burgers. Add 1 teaspoon of mustard to each bun. Place the rocket leaves on with a squeeze of lemon. Then add the fillets topped with coleslaw.
