Cashew nut stir-fry is one of the most popular dishes to make for lunch. It can be cooked in under 30 minutes. This meal contains so much flavour and texture. It is also a great dish to take to work and reheat. This dish is family friendly as it does not contain chilli for the kids.

Cashew nut stir-fry with prawns and baby corn is a delicious meal for the family. It is simple to make and does not take long to cook. This dish is filled with flavour and texture.

Ingredients

  • 20 Pieces of prawns

  • 1/2 Cup of cashew nuts

  • 175g Cashew nut base sauce

  • 1 Small brown onion

  • 1 Medium carrot

  • 200g Broccoli florets

  • 410g Canned baby corn

  • 1 Tablespoon of vegetable oil

Directions

  • In a medium wok, toast the cashew nuts on low heat until slightly brown. Place aside.
  • Slice the carrot and place it in a saucepan along with the broccoli. Boil the vegetables for 3 minutes on medium heat.
  • In a medium wok or fry pan, add the vegetable oil on medium heat. Add the prawns and allow them to cook for 3 minutes.
  • After 3 minutes, add the brown onion and cook for 2 minutes.
  • Add all the vegetables and cashew nuts.
  • Add the sauce and allow to cook for another minutes.
  • Serve with rice and enjoy.
