Chicken Quesadillas with Black Beans

Chicken quesadillas is a dish that I crave often. Not only is it fun to cook but they are tasty to eat. Each quesadilla is filled with mozzarella and deliciously seasoned chicken. They are great to eat hot but they taste amazing reheated. You can also take them to work as they travel well.

Chicken quesadillas with black beans are a lunchtime craving that I have often. They contain ingredients that are delicious and will be enjoyed by everyone. You can swap out ingredients or add according to your taste. Make them for yourself to eat straight away or reheat them the next day.

Ingredients

  • 400g Chicken breast

  • 1 and 1/3 Cup of shredded mozzarella

  • 1 Small red capsicum

  • 125g Can of black bean

  • 1 Tablespoon of taco spice mix

  • 4 Regular tortillas

  • 1 Tablespoon and 2 Teaspoons of vegetable oil

Directions

  • Cut the breast chicken into strips and place 1 tablespoon of vegetable oil in a medium fry pan.
  • Cook for 2 minutes on medium heat. After 2 minutes, add the taco spice mix and cook for another 2 minutes.
  • Leave to rest and cut the capsicum. Place 1 teaspoon of vegetable oil in a small fry pan and cook for 2 minutes. Leave aside.
  • In a large fry pan on low heat, place 1 tortilla down with 1 teaspoon of oil. Place down 1/3 of cheese on one side of the tortilla.
  • Add 100g of chicken, capsicum and black beans on one side. Fold the tortilla over into a half moon shape and cook for 2 minutes.
  • Flip the tortilla over and cook until golden brown.
  • Repeat instructions until all the quesadillas are done and enjoy.
