Butter chicken is one of the most popular dishes around the world. It is full of flavour and simple to make. This recipe will take 40 minutes and will fill your home with an amazing smell. This creamy butter chicken recipe is easy and simple. You can make this in a large batch and can be frozen. You can also take this butter chicken to work for lunch.

Ingredients

  • 30g Butter chicken spice blend

  • 500g Chicken breast or thigh

  • 400ml Coconut cream

  • 400ml Tomato Passata

  • 200ml Vegetable stock

  • 1 Medium brown onion

  • 1 Small red capsicum

  • 2 Cups of small cauliflower florets

  • 2 Tablespoons of butter

  • 2 Tablespoons of vegetable oil

Directions

  • Cut the vegetables and place aside.
  • Cut the chicken into bite size pieces. In a large sauce pan on medium heat, add the 2 tablespoons of oil and cook the chicken for 2 minutes.
  • After 2 minutes, add the vegetables and cook for another 2 minutes.
  • Add the cauliflower and the 30g of spice blend and mix all the ingredients together.
  • Pour in the tomato passata, coconut cream and the vegetable stock. Let simmer on low to medium heat for 20 minutes.
  • At the 18 minute mark, add the 2 tablespoon of butter, salt and pepper to your taste.
  • Serve the butter chicken with rice or any side of your choice.
