Ingredients
750g Chicken breast
300g Pack of coleslaw mix
25g Caribbean jerk seasoning
8 Tablespoons of mayonnaise
1/3 Cup of olive oil
Directions
- Place the chicken pieces in between baking paper and using a rolling pin flatten the chicken pieces.
- In a medium bowl add the olive oil and seasoning mix.
- Add the chicken pieces and turn them coating every inch in the spice mix.
- Add a large pan to medium heat and place the breast pieces in the pan.
- Cook the chicken for 8 to 10 minutes turning each 2 minutes.
- In the meantime, in a medium bowl add the coleslaw mix, mayonnaise and mix together.
- Remove the chicken and let rest for 5 minutes then cut and serve.
