Try this jerk chicken with crunchy coleslaw today for lunch. It will become a staple recipe for your household. Not only is it simple but it packs a tonne of flavour.

Ingredients

  • 750g Chicken breast

  • 300g Pack of coleslaw mix

  • 25g Caribbean jerk seasoning

  • 8 Tablespoons of mayonnaise

  • 1/3 Cup of olive oil

Directions

  • Place the chicken pieces in between baking paper and using a rolling pin flatten the chicken pieces.
  • In a medium bowl add the olive oil and seasoning mix.
  • Add the chicken pieces and turn them coating every inch in the spice mix.
  • Add a large pan to medium heat and place the breast pieces in the pan.
  • Cook the chicken for 8 to 10 minutes turning each 2 minutes.
  • In the meantime, in a medium bowl add the coleslaw mix, mayonnaise and mix together.
  • Remove the chicken and let rest for 5 minutes then cut and serve.
