minutesIndividual no bake cheesecake cups are so yummy and quick to make. They are great for a sweet bite after lunch or if you have guests over.
Ingredients
- Crust
8 Biscuits McVitie’s Digestive biscuit
2 Tablespoons of unsalted Butter
1 Tablespoon of crumbed Pistachio
- Filling
1 Cup of Thickened cream
225g of Cream Cheese
1 Tablespoon of Sugar
1 Teaspoon of Vanilla extract
1 Tablespoon of crumbed Pistachio
Directions
- Place biscuits in a tea towel and use a rolling pin to crush the biscuits
- Place the crumbs in a medium bowl, add melted butter with the pistachios and mix together
- For the filling, in a medium bowl add the cream cheese, sugar and vanilla extract and whisk until smooth and all combined.
- In a separate medium bowl pour in the thickened cream and with an electric mixer, beat until soft peaks. Do not overbeat.
- Put half of the thickened cream into the cream cheese mixture and fold through. After 30 seconds, fold in the other half.
- Divide the crust into 6 cups and gently press down with a small spoon. Evenly spoon the filling mixture into the cups and place in fridge for at least 3 hours.
- Serve with Pistachio crumbs on top or with fresh fruit.
