Individual no bake cheesecake cups are so yummy and quick to make. They are great for a sweet bite after lunch or if you have guests over.

Ingredients

  • Crust
  • 8 Biscuits McVitie’s Digestive biscuit

  • 2 Tablespoons of unsalted Butter

  • 1 Tablespoon of crumbed Pistachio

  • Filling
  • 1 Cup of Thickened cream

  • 225g of Cream Cheese

  • 1 Tablespoon of Sugar

  • 1 Teaspoon of Vanilla extract

  • 1 Tablespoon of crumbed Pistachio

Directions

  • Place biscuits in a tea towel and use a rolling pin to crush the biscuits
  • Place the crumbs in a medium bowl, add melted butter with the pistachios and mix together
  • For the filling, in a medium bowl add the cream cheese, sugar and vanilla extract and whisk until smooth and all combined.
  • In a separate medium bowl pour in the thickened cream and with an electric mixer, beat until soft peaks. Do not overbeat.
  • Put half of the thickened cream into the cream cheese mixture and fold through. After 30 seconds, fold in the other half.
  •  Divide the crust into 6 cups and gently press down with a small spoon. Evenly spoon the filling mixture into the cups and place in fridge for at least 3 hours.
  • Serve with Pistachio crumbs on top or with fresh fruit.
